Hitohira is a brand established in 2016 by a former staff member of a long-established knife shop in Kappabashi who decided to become independent.
Before working at Tsubaya, the owner lived overseas and worked at a local knife shop, where they developed an interest in traditional Japanese culture. This inspired their return to Japan and subsequent training at Tsubaya.
The owner had always been passionate about knives, frequently visiting various production areas and maintaining connections with craftsmen. Initially, Hitohira focused primarily on B2B sales, supplying Japanese knives to specialty knife stores overseas, particularly in Europe and America, where they are popular in many renowned shops.
In 2022, they opened a store in Setagaya, Tokyo, and have since also become a beloved local shop. Although their main business remains the export of their products overseas, with a constant influx of orders from abroad, they are dedicated to exporting Japanese culture and tradition, committed to preserving these traditions while valuing their customers and continuing their operations.
In addition to knives from various parts of Japan, Hitohira has recently expanded to selling other kitchen tools as well. The storefront is relatively small but features a carefully curated selection of products.
Knowledgeable staff members are available to provide detailed and attentive service. Although it is a bit removed from the city center, it is certainly worth the trip for those seeking simple yet traditional products.
